The Setup
Meet Radish Bistro, a (fictional) fast-casual restaurant that handles roughly equal volumes of in-store dining and online orders. Their kitchen team needed a way to manage these two distinct order streams efficiently without creating chaos during peak hours.
How They Use Fresh KDS
Two Specialized Prep Lines
Radish Bistro runs two dedicated prep lines. Their back line handles all online orders (delivery and pickup), while the front line manages in-store dining orders. Each line has its own KDS screen configured with Fresh KDS’s order type filtering feature, ensuring each station only sees relevant orders. This eliminates confusion and keeps both teams focused on their specific workflow.
Centralized Expo Station
Once orders are prepared, they converge at the Expo station, which displays all order types on a single screen. The expo team performs final quality checks and coordinates the handoff to customers. This central checkpoint ensures nothing leaves the kitchen without proper verification.
Smart Screen Communication
Here’s where Fresh KDS really shines. When the Expo bumps an order, different actions trigger automatically based on the order type:
- In-store orders: A paper ticket automatically prints, providing food runners with the table number and order details for seamless handoff to dine-in guests.
- Online order: Clearing the order from Expo automatically updates the status to “Ready” on the Takeout Management screen (used by staff to coordinate pickups) and the customer-facing order ready board. With the customer-facing board, guests can see if their order is ready without needing to ask. Once the order is handed off, clearing it from the Takeout Management screen also removes it from the order ready board.
The Result
Radish Bistro processes high volumes of both in-store and online orders without bottlenecks. Kitchen staff stay focused on their stations, the expo maintains quality control, and customers receive accurate, timely updates about their orders.
